2. Evil Morty was Rick's 1st Morty because it says that Rick left main Beth 6 years before main Morty was born and Evil Rick (who was evil Morty) showed memories of a baby Morty
3. Rick knows he's in a cartoon because he's so smart. At the end of season 1 he said "That's the end of season 1, roll credits!"
