Using arrows to destroy the crystals and shoot down the dragon is a good method. Also don't forget to collect its breath in bottles if you want to use it for potions.
Resurrecting it isn't that bad either, you just have to farm wither skeleton skulls and get a couple ghast tears. There are some good guides online that show you what you need and how to revive it.
