High vram is only necessary if you're playing on more than 2 monitors (1GB vram per monitor). I was implying in terms of performance output, 2 x 270x ($420) = 1 x 290x ($620). I probably didn't need to quote the entire post, but, I did anyway. I don't mean to sound condescending, so please don't take it that, you've made a really nice build.
Keep in mind with crossfire, that some games do not support it, and some perform worse with it than they would on just a single card. Granted the games with lacking support are probably old games, but if you want to play older games you may run into issues.

I bought a GTX780, I also run dual 2560x1440 displays. My VRAM usage idles around 2 - 5%, which is like 60 - 150MB. I usually don't exactly idle though, so it sits around 25 - 30%, it depends what I'm doing, I usually leave a bunch of shit open that I don't need.

Well, I got distracted while typing this, I think I was trying to make a point, not sure if I made it or not. Oh well.

Ray just letting you know don't get AMD Cards trust me on this one I had a R9 280x for 6 months it sucked so bad driver support was terrible Mantle was broken and still is. There optimization is terrible I had to switch back to my gtx 660ti and I still had better performance just stick with Nvidia.
