[Marinate]
1. Cut the meat into 1inch cubes
2. Soy sauce & white pepper on meat
3. Add corn starch and knead the meat
4. Set aside for an hour
[Batter]
1. All purpose flour, corn starch, pinch of salt into bowl
Mix Well
2. Make a well in the middle of the bowl
3. Add egg, cooking oil, 1/3 milk into well
4. Mix constantly while adding the remaining 2/3 of the milk slowly
5. Mix well till there are no clumps and silky smooth
6. Set aside
[Batter]
1. Pineapple juice, raw sugar, corn starch, keptchup, oyster sauce & apple cider vinegar
2. Mix well & set aside
[Cooking]
1. Take the marinated cubes of meat out
2. Dip it into the batter and shake excess batter off
3. Deep fry till golden brown
4. Place meat on paper towels to absorb excess oil
5. Put oil into pan and heat
6. Fry ginger and garlic till golden brown on low heat
7. Caramalise onions and add remaining ingredients
8. Once all ingredients are cooked, pour in sauce
9. Simmer till it thickens up
Rmb to taste and test for fluidity
we don't want the sauce to be Team Liquid
if it is too thin, add teaspoon-wise of cornstarch till u get a sauce that is slowly dripping off your spatula
10. Add pork in and coat it with that glossy wonderful sauce
