Best is subjective tho. Because there's many genres and categories but hollow knight is amazing and something I'd actually be comfortable calling best but then again there's probably better i.e disco Elysium (which I think is indie) a Neo noir CRPG , not really my thing but I can understand why people might actually LOVE it

My favorite indie games I can think of rn are Undertale, FNAF, Fran Bow, Little Misfortune, Little Nightmares, Sally Face, Doki Doki Literature Club, Omori, and The Coffin of Andy and LeyLey. I just realized most of the games I like now a days are indie games lol.
